Cais na Tire is a hard sheep milk cheese, loosely based on the tomme cheese recipe. It is sweet with caramel like tones. It is very suitable as an alternative to Parmesan cheese but also great on a cheese board or for melting

I can’t have cow’s milk products and I haven’t had parmesan for 15 years. May all the blessings of the cheese Gods be upon you. Finding your cheeses have made 2020 worthwhile and 2021 can begin in the right vein.
I must add the diet will start after the cheese is gone, it might take a while.

This is an excellent cheese, when we asked Peter Ward if he had a good manchego we could buy, he said why don’t you try this great sheep’s cheese from Ballinderry. We did. We absolutely love it. Getting ready to try it in our pesto and with pasta.
